Creamy mango rice
Serves 4
Ingredients
Some people like an occasional glass of stout to boost their appetite. You might like to make your own drinks such as fruit milkshakes or smoothies. Make a smoothie by blending fresh apple, strawberries, banana or other soft fruit with fortified milk, fruit juice, ice cream or yoghurt in a liquidiser or blender. - 28g/1oz sugar
- 40g/1.5oz ground rice
- 560ml/20floz milk
- 2 very ripe medium mangoes
- Lemon juice to taste
Instructions
- Place the sugar, ground rice and milk in a thick-bottomed saucepan and simmer for 20-30 minutes, stirring occasionally. Allow to cool.
- Peel the mangoes and put about a quarter of the flesh to one side.
- Puree the remaining fruit and stir into the rice cream. Add lemon juice to taste (optional).
- Chop the reserved fruit and add to the fruit cream.
- Pour into a dish and chill well before serving.
Note: Equivalent quantities of alternative fruits may be substituted for the mangoes.

Stuffed baked apples
Serves 4
Ingredients
- 4 cooking apples
- Water
- 1 tablespoon runny honey
- 28g/1oz butter, melted
- Cream or ice cream to serve
Stuffings (choose from the following):
- Chopped hazelnuts, sultanas and honey
- Mincemeat
- Chopped dates, walnuts and honey
- Chopped prunes and brown sugar
- Raisins and honey
- (You will need approx. 2-3 teaspoons of each filling per apple.)
Instructions
- Preheat the oven to 200C/400F/Gas mark 6.
- Core the cooking apples and then make a slit in the skin of each to form a ring around the middle.
- Stuff the centre of each apple with the filling of your choice.
- Place the apples in an ovenproof dish and then add 5mm/0.25 inch water and 1 tablespoon honey.
- Drizzle the melted butter over the apples and then bake until the fruit is tender (about 50-60 minutes).
- Serve hot or cold, with cream or ice cream if you wish.
